Food waste is a huuuuge recipe dev issue! It always drove me mad. I was happy to have committed to a mofongo recently because my mother in law showed up with just the right number of plantains. I decided I am focusing energy on recipes I can make with excess and that can store and share well.

Another thought – I think it’s possible to be less wasteful if the readers accept recipes that are more technique-focused rather than volume-focused, ie teaching them how to cook rather than follow a set of instructions

100% — I think even though recipes are great and useful it’s so important for people to understand how to make them fit their pantries / lives rather than bending to the recipe, because that’s where waste can build.

Glad I’m not alone in that thought. And likewise, I’m not abandoning it altogether, but any recipes I do share will be the product of a slow and minimal waste process

Ah, the food waste. Yes. This is so painful. Hey — physical cookbook or no, recipes or no, I'm so happy to experience the thoughts and ideas in this newsletter. I learn form them.
